Brinjal masala

Ingredients:
Brinjal : 1 big (5 - 6 small)
Grated coconut : 1 & 1/2 cup
Onion : 2
Garlic : 4 - 5 cloves
Tomato : 1
Garam masala : 2 tblsp
Prawns : 7 - 8 (optional)
Salt : to taste
Sweetener : to taste

Procedure:

Chop and sauté one onion and the garlic until light brown, then add coconut and keep stirring for 8 - 10 minutes on medium to low heat. Add garam masala to this and grind it to make a thick paste.

Chop and sauté the other onion until light brown, then add the tomato and sauté till it is soft. Add cleaned prawns and stir till they change colour.

Then add the brinjal pieces and cook on a medium heat. When half done add the ground masala, bring it to a boil and cook until the brinjals is soft. Add salt and sweetener to taste.

Serve with rice or chapati
