Chana Ros
Ros is a vegetarian preparation made of legumes such as peas, beans and lentils.
Ingredients:
Peas or beans : 1 cup
Oil : 1 tblsp
Garlic : 3 cloves
Ginger : 1/2 inch piece
Curry leaves : 6 sprigs
Onion : 1
Coconut : 1 & 1/2 cups
Fresh coriander : handful
Tomato : 1
Garam masala : 1 - 2 tblsp
Salt and sweetener to taste.
Tempering:
Mustard : 1 tsp
Cumin : 1 tsp
Asafetida (Shankar brand hing) : 1 cm piece
Green chili : 1
Curry leaves : 2 sprigs
Procedure:
Soak the legumes overnight and pressure cook them till soft.
Heat oil in a pan, put garlic, ginger and curry leaves and sauté till the leaves turn crisp and dark in colour. Then add sliced onion and sauté till light brown.
To this add the roughly chopped fresh coriander, grated coconut and roast on low flame for 10 mins.
Grind the roasted coconut to make a thick paste along with some garam masala
Add the ground masala paste and chopped tomato to the boiled legumes and bring it to a boil.
In a tempering pan heat oil, add mustard, cumin, asafetida, curry leaves and green chilies.
Then add the tempering to the gravy.
Add salt and sweetener to taste.
