Aam panna

Aam panna is a drink made of unripe mangoes which are about to ripen. The drink is refreshing in the summers and full of vitamin C. You can either make it with sugar or jaggery. The quantity of the sweetner may differ depending on the sweetness or tartness of the mangoes. 

Ingredients :
Unripe mangoes :  2
Sugar /Jaggery : 1 or 1 & 1/2 cup
Salt (or black salt) : 1 tsp
Pepper powder : 1/2 tsp
Cardamom powder : 1 tsp

Procedure :

Wash the mangoes thoroughly, put them in a pot with a cup of water and boil them until the flesh is soft.


Using a spoon scoop out the flesh from the mangoes and scape it from the seed aswell. 

Put the mango pulp into a mixer jar, add sugar/ jaggery, salt,  pepper powder, cardamom powder and blend it to make a smooth paste. (For a longer shelf life, you could boil the jaggery or sugar in the remaining water, then use it to grind the mango pulp.)

Transfer the paste back to the pot add more sweetener if required. Now this is ready for instant use, simply add some cold water and serve. (The colour of drink will differ depending on the sweetner you use.)


If you want to store it for later use, cool it, pour it into a glass jar and keep refrigerated or freeze it. This will form like a jam due to the presence of pectin. Add little water and whisk it, then add more water according to the desired sweetness.


Take required quantity of this preserve, put it into a mixer jar and blend it to make it smooth again. Then add water as per your preference. 

Serve with some mint leaves if you like.
