Ankur ros or mangrove ferns masala gravy
Mangrove fern is a large species of fern that grows by the riverside and other wetlands. It is known as Ankor, Ankur or ankrio in Goa which means tender shoots.
Ingredients:
Ankur bunches : 2
Onion : 2
Garlic : 2 - 3 cloves
Coconut : 3 cups
Kokum rinds : 7 - 8
*Prawns : 1/2 cup
Garam masala powder : 2 - 3 tblsp
Jaggery : 1 - 2 tblsp
Salt : 2 - 3 tsp
Procedure:
Slice an onion and sauté it along with garlic, add coconut and roast it for 8 to 10 minutes on a low flame until it turns light brown in colour. Then add garam masala to it.
Wash the ankur and chop it fine, also chop the other onion.
In a large pot sauté onions, add prawns and fry them for a while.
And fry them for a while.
Then add the chopped ankur, kokum rinds, two cups of water and cook it on a low flame.
Grind the roasted coconut with water to a thick paste.
Add the ground paste to the cooking ankur.
Add more water to obtain the desired consistency. Mix everything, then add salt and jaggery (can add sugar or stevia in place of jaggery) to taste.
* If you want to do the vegetarian version without prawns, add boiled white peas to the cooked ankur without any onions. Rest of the recipe remains same. Or refer the taro recipe.
