Stuffed Brinjal

Ingredients:
Roasted peanuts : 3 tblsp
Coconut : one bowl
Ginger : 1 inch
Garlic : 6 cloves
Coriander seeds : 1 tsp
Cumin seeds : 1 tsp
Turmeric powder : 1 tsp
Chili powder : 1&1/2 tsp
Garam masala powder : 1 tsp
Amchoor powder : 1 tsp
Onion : 1
Coriander : handful
Jaggery : 1-2 tblsp
salt - 1&1/2 tsp
Oil - 1 tblsp
Mustard : 1 tsp
Cumin : 1 tsp
curry leaves : 2 -3
Tomato : 1

Procedure:

Roast the peanuts, crush them and discard the skins.

Grind coconut, roasted peanuts, ginger, garlic, coriander seeds and cumin.

To the ground paste add turmeric powder, chili powder, garam masala, amchoor powder, finely chopped onions ,fresh coriander, jaggery, salt and some oil. Mix all the ingredients well.

Cross slit the brinjals lengthwise and stuff them with the prepared masala.

Heat oil in a heavy bottom pan or cooker and add mustard, cumin, curry leaves, and chopped tomatoes. 

Add the stuffed veggies and coat them nicely.

Then add some water, cover and cook till half done. Finally add the remaining masala paste and cook till soft. Or just pressure cook them.

You can even stuff some onions and baby potatoes and put along with the brinjals.
