Aubergine / brinjal omelette
Brinjal omelette tastes similar to a brain omlette.
Ingredients:
Brinjal : 1 medium size
Onion : 1
Potato : 1 small (optional)
Green chili : 1 - 2
Pepper powder : 1 tsp
Eggs : 3
Salt : to taste
Procedure :
Wash the brinjal and roast it over a pan keeping it covered or on live coals until it is soft.
Peel the skin on one side and scoop out the flesh or peel it completely.
Boil and mash the potato, add the mashed brinjal, finely chopped onions, green chilies, eggs, salt and pepper and mix well.
Heat a pan, pour small portion of the mixture (small portions makes it easier to flip), cover and cook on one side.
Then flip and cook on the other side.
