Aubergine / brinjal bhartha or salad
Ingredients:
Brinjal : 1 big
Onion : 1 medium
Capsicum: 1/2 (optional)
Green chili : 1 - 2
Grated coconut : 4 -5 tblsp
Tamarind : marble size ball
Salt : to taste
Procedure :
Wash the brinjal and roast it over a pan keeping it covered and switching sides occasionally. Or you could do this over a barbecue grill until it is soft. Roast the onion aswell if you wish to or leave it raw if you like. You could also roast the capsicum if you wish.
After roasting, peel the brinjal skin on one side and scoop out the flesh; or peel it completely.
Add finely chopped onions, capsicum, green chili, tamarind cut into bits, salt and coconut and mix well. (You may microwave the onion for a minute if you want to avoid the onion odour in your mouth and still enjoy the crunch)
Mix everything together.
