Stuffed brinjal goan style
This particular Goan style stuffed brinjals tastes like a kismur. Very easy to make with some basic ingredients and no grinding.
Ingredients :
Brinjals : 6 (small)
Grated coconut : 1 cup
Onion : 1 big
Green coriander : handful
Green chili : 1 or 2 (depending on the spice)
Chili powder : 1 tsp
Turmeric powder : 1/2 tsp
Pepper powder : 1/4 tsp
Asafetida powder : 1/4 tsp
Tamarind : marble size ball
Jaggery : 1 & 1/2 tsp
Oil : 3 tblsp
Salt : to taste
Procedure :
In a bowl or plate take grated coconut, chopped onion, chopped coriander, chopped green chili, chili powder, turmeric powder, pepper powder, asafetida powder, jaggery and salt salt.
Mix all the ingredients well and taste the mixture to check for any seasoning. Add spice, salt, sweetener if required.
Wash the brinjals, trim off long stems and peel out the calyx from the top. Put lengthwise cross slits from the opposite side of the stem, keeping it attached at the stem. Open up the slits and stuff it with the prepared coconut mixture.
In a heavy bottom pan place the stuffed brinjals and pour three tablespoon of oil from the sides. Cover it with a lid and let it cook over medium heat for 5 to 7 minutes. Then top it with the remaining coconut mixture and cover it again and allow it to cook further.
Flip the brinjals on every side so that it gets cooked evenly.
Serve with rice and curry or chapati.
