Perad or Guava cheese

Peraad 

Ingredients : 
Guavas :  4 - 5 big
Sugar : 2 & 1/2 cups
Butter : 1 tbsp.
Lemon juice : 1 tbsp
water : 1 cup

Procedure :

Cook the guavas in water for 25 - 30 minutes until they become soft (to add colour you may add some red hibiscus flowers while cooking the guavas and then discard them; or steep the flowers in boiling water and use the coloured water for cooking. Or you may add one plum or some mulberries while cooking)

Scoop out the seed section and pass it through a sieve, also strain the remaining boiled water. Grind the fleshy part of the fruit to make a puree or pass it through the sieve.

Measure the puree (I got 4 cup including the water) add half part and a little extra sugar (2 & 1/2 cups). Cook it on a medium- high flame stirring continuously using a long wooden spatula. Keep stirring throughout as it will be bubbling and will splatter out.

Keep stirring until it stops bubbling and starts leaving the sides. Add lemon juice and butter; and cook for some more time. 

When it comes together as one mass, switch off the flame and transfer it into a greased tray. Spread it evenly, put butter on top and smoothen the surface with help of a spatula. 

Allow it cool, then cut into diagonals.
