Carrot halwa
Carrot halwa, India's most relished desert.
Ingredients:
Grated carrot : 4 cups
Sugar : 1 cup (Adjust to taste)
Milk : 1 cup
Ghee : 2 tblsp
Cardamom powder : 1 tsp
Salt : 1/4 tsp
Dry fruits : as desired
Procedure :
Wash and finely grate the carrots.
Put the grated carrots, milk and sugar in a saucepan and cook it for a while. I use milk instead of khoa/ mava as it gives the halwa a smooth and even creamy texture and not those bit of milk in between.
Let it cook on a medium to high heat, stirring occasionally.
When the liquid has evaporated and everything is dry, push the halwa towards one side of the sauce pan and add ghee into the free space. Then add dry fruits and roast them for a while (chopped cashew nuts, almonds, melon seeds, raisins etc. You may pre roast the dry fruits in the beginning if you wish). Incorporated the dry fruits into the halwa and cook it for a few more minutes until it looks glossy.
Finally add cardamom powder and salt and give it a mix. I put a bit of salt to enhence the sweetness and balance the taste as I have used less sugar.
