Bolinha (Semolina cookies)

Bolinha are cookies made of semolina and coconut.

Ingredients:
Semolina : 2 cups
Grated coconut : 2 & 1/2 cups
Sugar : 1 cup
Ghee : 2 tbls
Egg : 2
Cardamom or nutmeg powder : 1 tsp
Salt : 1 tsp
Baking powder : 1/2 tsp
*Milk : 2 tblsp (optional)

Procedure:

Take a sauce pan, put semolina and dry roast it on a low flame for 10 minutes.

Add 1 tblsp ghee, mix everything well, then transfer it in a bowl and keep aside to cool.

Put coconut and sugar in the pan, add one tblsp ghee and cook it on a low flame. Allow this to cool.

Add eggs to the coconut mixture and grind it on a mixer.

To this ground mixture add the roasted semolina, salt and mix well. Let it rest overnight or minimum 4 hours.

Add baking powder and spice powder just before baking.

Make lemon size balls and and slightly flatten it. *If you feel the mixture is too dry to shape, add milk.

Use a fork or spoon to make a design if you wish. This will make around 22 pieces.

Bake at 180 degrees for 35-40 min or till nicely baked.
