Goan Gons or candied tender coconut

Gons is a coconut sweet made of tender coconut just under maturity, which can be cut into thin strips and should be soft to eat.

Ingredients:
Tender coconuts : 5 (4 cups)
Sugar : 2 cups (or 1& 1/2 if you want less)

Procedure:

Break the coconuts into half and scoop out the kernel using a table knife. Peel the tasta (the brown layer) with a peeler and wash them in water.

Cut the kernel into thin strips and measure 4 cups.

Take a saucepan put the coconut strips and sugar (I have used 1 & 1/2 cup)and cook on a low flame.

After some time it will release a lot of liquid, continue cooking until the coconut turns translucent and the liquid dries up.

When it is ready it will leave the sides of the pan, switch off the gas at this point. If you over cook it the sugar will start crystalizing and the coconut strips will separate and not stay together.

Keep a butter paper ready to drop the candy. Take a spoonful or use a tongs to pick and place it on the paper.

Then cut out the paper separating each portion.
