Bathk or bathika - semolina cake

Bathk is a semolina and coconut cake traditionally made during Christmas season.

Ingredients:
Rava / semolina : 250 gms
Sugar : 250 gms
Grated coconut : 1 &1/2 cup
Eggs : 5
Butter : 200 gms
Salt : 1/2 tsp
Baking powder : 1 tsp
Cardamom/ nut meg powder : 1 tsp

Procedure:

Take a sauce pan, put semolina and dry roast it on a low flame for 5 minutes and transfer it into a bowl and keep aside to cool.

Mix grated coconut and sugar (if you  have time allow it to rest and wait until it releases it's syrup ) and grind it in a spice grinding mixer jar.

Put the ground coconut in a pan and cook on a low flame for 5 minutes or untill it starts to boil. Then add butter, mix well while it melts and switch off the flame and allow it to cool down a bit.

After cooling add the roasted semolina and salt and mix it well. 


Whisk the eggs separately and then add them into the mixture when it becomes completely cool, let this rest overnight or minimum 6 hours.


Add baking powder and spice powder just before baking and mix well.

Line a tin with butter paper or dust it with some flour and put the prepared batter into it and bake @ 180 degrees for 40 min or until it's done.
