Set dosa

Set dosa is a soft and spongy dosa.

Ingredients :
Rice : 2 cup
Udid dal : 1/2 cup
Cooked rice : 1 cup

Procedure : 

Wash the rice and dal thoroughly and soak them in water for 7 - 8 hours. Soaking should be done in the morning around 7 - 8 am so that the batter gets enough fermentation time special during cold seasons like winter and rainy.

After soaking grind them in the late afternoon around 3 - 4 pm along with cooked rice to make a smooth batter using the same water in which they were soaked. Add more water if required to get a spreadable consistency. 

Add salt to the batter also some sweetener if you like. Mix well and allow it to ferment overnight. (12 - 16 hours - you may require more or less fermentation time depending on the room temperature and weather.)

After fermentation you will have a bubbly batter. Do not disturb the batter by stirring,  use it directly for making spongy dosas.

Heat a pan, put a drop of oil and spread it over the pan using a half of an onion or a brush or paper towel. On a medium heat pour a laddle full of the batter at the center and spread it over the pan. Or if you like them thin add a bit more water to the batter and spread all over the pan. Keep it covered and cook over a low heat.

Flip over and cook on both the sides if you wish. 

Serve with chutney or other curries of your choice like pav bhaji, patal bhaji, potato bhaji, dal etc.
