Medu wada
Meduwada is a shouth Indian, donut shaped, savoury, fried snack made of urad dal (split black gram).
Ingredients:
Urad dal : 1 cup
Rava : 1/2 cup
Onion : 1 (small)
Ginger : 1 inch piece
Pepper corns : 8 - 10
Cumin seeds : 1/2 tsp
Green chili : 1 - 2
Curry leaves : 2 sprigs
Coconut pieces : 2 tblsp
Salt : 1 tsp
Procedure:
Wash the dal and soak it in water for 4 - 5 hours.
Drain out the water completely into a bowl and keep aside. Take half the quantity of the dal and grind it using a spice grinding jar of a mixer intially without any water. Then add some of the drained water and grind again to make a thick batter.
Let the batter rest for 3 hours, then whisk it using a fork or with your hand so that it gets aerated and becomes fluffy.
Then add salt, chopped onion, ginger, green chili, curry leaves, coconut pieces, cumin seeds, pepper (whole or slightly crushed) and rava and mix well. (You may require more rava if the consistency is too running and difficult to handle)
Wet the left palm in water and place a tablespoon of the batter over it. Shape it round and make a hole in the center like a doughnut.
Then wet the right hand in water and take the shaped batter by the right hand and immediately drop it slowing and carefully into the hot oil for deep frying. Fry on a low flame on both the sides till golden brown. This is make around 12 medium size wadas.
Serve with coconut chutney, ketchup or curd and tamarind chutney.
