Uttapam

Ingredients:
Batter 
Rice : 3 cup
Urad dal : 1 cup
Chana dal : 1/4 cup
Fenugreek seeds : 1 & 1/2 tsp
Salt : to taste
Coconut oil : as required
Topping
Onion : 2
Green chilies : 2 - 3
Capsicum : 1
Tomato : 1
Chili flakes : 1 tsp
Curry leaves : 1 sprigs 
Coriander leaves : handful
Sambhar masala : 1 tsp

Procedure: 

Wash the rice, dals and fenugreek thoroughly with water then soak for 8 hours and grind it to a fine paste. 


Ferment the batter overnight. Next day add salt and some water if required to make a spreadable batter.


Chop onions, capsicum, tomato, green chilies, curry leaves, coriander and mix together with chili flakes and sambhar powder ( You may add some ginger if you like)

Heat a pan, turn the flame to low; lightly grease the pan for the first uttapam and spread a laddle full of the batter on the pan. Put the chopped toppings over it, drizzle some oil and sprinkle some salt; then lightly press the toppings into the batter with the help of a spatula. Cover and let it cook for a minute 

Flip and cook on the other side for another minute. 

Serve with sambhar or chutney.
