Potato bhaji dry

Dry potato bhaji is used as a stuffing for potato wada and dosa.

Ingredients:
Potatoes : 6 medium
Oil : 2 - 3 tblsp
Mustard : 1 tblsp
Cumin : 1 tsp
Carom seeds (ajwain) : 1/4 tsp
Curry leaves : 2 - 3 sprigs
Chana dal : 2 tblsp
Urad dal : 2 tblsp
Garlic : 6 - 8 cloves
Ginger : 2 inch piece
Onion : 4 medium
Green chilies : 2 - 3
Fresh coriander : handful
Salt : to taste
Sweetener : to taste

Procedure: 

Heat oil in a pan, add mustard, cumin, ajwain and curry leaves. Then add the dals (pre washed) and fry them till aromatic.

Add chopped onions and sauté until they become soft. 


Add chopped ginger, garlic, green chilies, turmeric powder, sweetener and sauté for a minute.

Then add salt, chopped coriander and mashed potatoes. 

Combine everything together.
