Mango cake

Ingredients:
Butter : 250 gms
Sugar : 1 cup
Eggs : 5
All purpose flour (maida) : 2 cups
Baking powder : 1 tblsp 
Mango pulp : 1 cup
Lemon rind :  of 1 lemon

Procedure:

Puree the mango pulp (pass the puree through a sieve if there is too much fiber in the mango), add 2 tblsp sugar and cook it on a low flame for 5 minutes. Then allow it to cool. Cooking the puree is important otherwise the cake will taste uncooked.


Powder the sugar and whisk it along with softened butter until it becomes fluffy; then add eggs one at a time and whisk again. 

Sift in the flour and baking powder using a sieve and fold it into the butter and egg mixture little at a time to make a smooth batter.

Finally add the cooked mango puree and lemon rind and mix well. 


Prepare a baking tin by applying oil and dust it with flour or put butter paper.

Pour the prepared batter in it and spread it evenly. Preheat the oven and bake it between 150⁰ - 180⁰ for about 1 hour and 15 minutes or until you see it loosen the sides.


Dress it with whipped cream and mango puree frosting.
