Carrot cake
Ingredients:
Butter : 200 gms
Oil : 1/4 cup
Sugar : 1 cup + 4 tblsp
Eggs : 5
All purpose flour (maida) : 2 cups
Baking powder : 1 tblsp
Grated Carrot : 2 cups
Cinnamon powder : 1 tsp
Procedure:
Wash and grate the carrots, add 4 tblsp sugar and cook it on a low flame for 5 minutes; then allow it to cool.
Powder the sugar and whisk it along with softened butter and oil until it becomes fluffy.
Sift in the flour and baking powder using a sieve and fold it into the butter and egg mixture little at a time to make a smooth batter.
Finally add the cooked carrots and cinnamon powder and mix well.
Prepare a baking tin by applying oil and dust it with flour or put butter paper.
Pour the prepared batter in it and spread it evenly. Preheat the oven and bake it between 150⁰ - 180⁰ for about 1 hour and 15 minutes or until you see it loosen the sides.
