Strawberry cake with cheese frosting
Strawberry cake
Ingredients:
Butter : 250 gms
Sugar : 1 cup + 2 tblsp
Eggs : 5
All purpose flour (maida) : 2 cups
Baking powder : 1 tblsp
Strawberries: 1 &1/2 cup
Frosting :
Whipping cream : 1 cup
Sugar : 1/2 cup (if cream is not sweet)
Cheese spread : 2 - 3 tblsp (optional)
Procedure:
Wash the berries, trim off their stems and chop them fine. Put them in a small pot, add 2 tblsps of sugar and cook it on a low flame until the berries are cooked and you get a sauce consistency.
Powder the sugar and whisk it along with softened butter until it becomes fluffy; then add eggs one at a time and whisk again.
Sift in the flour and baking powder using a sieve and fold it into the butter and egg mixture, little at a time to make a smooth batter.
Finally add 2/3 of the strawberry sauce and mix well.
Prepare a baking tin by applying oil and dusting it with flour or put butter paper.
Pour the batter in it and spread it evenly. Preheat the oven and bake it between 150⁰ - 180⁰ for about 1 hour and 20 minutes or until you see it loosen the sides.
You can put a layer of the strawberry sauce and then put another layer of batter, forming a sandwich in case you are not going put any frostinginbetween. Then bake it.
Take chilled whipping cream in a large bowl and whisk it till it becomes stiff, then add powdered sugar and cheese spread and whisk again.
After the cake has cooled down, cut a layer to make two equal halves. Spread the remaining strawberry sauce over the lower layer, then spread the frosting over it. Now place the second layer of the cake and spread the frosting on top and on the sides of the cake and decorate it with fresh strawberries.
