Candied orange peels
Candied orange peels are mostly used for making plum cakes and other recipes that calls for it. They also taste good as is.
Ingredients :
Navel orange peels : 1/2 cup (chopped)
Water : 1 cup
Sugar : 1/4 cup
Procedure :
Discard the white pith of the orange peels (this is optional) and blanch them in hot water.
Drain the water out and chop them finely.
Add water (the proportion of water should be less if you are using bigger quantity, the water level should be a bit higher than the peels level) and bring it to a boil, then simmer and allow it to cook till it becomes soft and the water has dried up.
After the water dries up add sugar, this will again release a lot of water.
Cook it on low flame till it dries up completely.
At this point switch off the flame and keep stirring continuously until the sugar gets crystallized and the pieces are separated.
