Aloo tikki

Aloo tikki is a famous street food of India, well known as a chaat item.

Ingredients:

Potatoes : 3
Oil : 3 tbls
Ginger : 1 inch piece
Fresh coriander : 3 tblsp
Cumin : 1 tsp
Carom seeds (ajwain) : 1/4 tsp
Chili flakes : 2 tsp
Pepper powder : 1/2 tsp
Garam masala powder : 1 tsp
Salt : 3/4 tsp
Rice flour/ APF(maida) : 4 tblsp + extra for dredging 

Procedure :

Boil potatoes, peel them and chop them fine (do not mash).

Add chopped coriander, ginger, chili flakes, ajwain, cumin, garam masala, pepper powder, salt and flour.

Combine everything nicely using a fork, cutting through the potatoes until you get a crumb consistency.

Take some of the mixture in hand, roll it over dry flour and shape them into medallions.

Heat a pan, grease it with some oil and fry the tikkies on both sides.

Serve with curd, tamarind sauce or ragda.
