Aloo tikki

Aloo tikki is a famous street food of India, well known as a chaat item. It can be served as is or along with yoghurt or ragda or just some chutney or sauce. 

Ingredients:
Potatoes : 3
Oil : 3 tbls
Ginger : 1 inch piece
Fresh coriander : 3 tblsp
Cumin : 1 tsp
Carom seeds (ajwain) : 1/4 tsp
Chili flakes : 2 tsp
Pepper powder : 1/2 tsp
Garam masala powder : 1 tsp
Salt : 3/4 tsp
Rice flour/ APF(maida) : 4 tblsp + extra for dredging 

Procedure :

Boil the potatoes for 20 minutes or in a pressure cooker until 3 whistles. They shouldn't be over cooked. Then peel them and cut them into small pieces (do not mash).

Add chopped coriander, ginger, chili flakes, ajwain, cumin, garam masala, pepper powder, salt mix everything then sprinkle the flour and mix it again.

Combine everything nicely using a fork, cutting through the potatoes until you feel the mixture can hold together.

Take some of the mixture in hand, shape it into a medallion (tikki) and roll it over dry flour.

Heat a pan, grease it with some oil and fry the tikkies on each side until golden brown. 
Serve with yoghurt, tamarind sauce or ragda.
