Croquettes- chicken/beef

 

Croquettes are usually made of beef, in this recipe I have used chicken for those who don't eat beef. Same recipe can followed to make beef croquettes.

Ingredients :
Chicken breast : 2
Vinegar : 3 tblsp
Onion : 2
Oil : 1 tblsp
Garlic : 3 cloves
Ginger : 1/2 inch
Green chili :1 - 2
Coriander : handful
Ketchup : 1 tblsp
Salt : to taste
Egg : 1
Oil : for deep frying
Bread crumbs/ rava : for coating
Masala:
Garlic : 3 cloves
Ginger : 1/2 inch piece
Spicy red chilies : 2
Turmeric powder : 1/2 tsp
Pepper : 1/2 tsp
Cinnamon : 2 inch pieces
Cloves : 6
Cumin : 1/2 tsp

Procedure:

Grind the masala ingredients to a paste (or use jeere meere masala with ginger-garlic paste and red chili powder)


Clean the meat and marinate with salt, 2 tblsp vinegar and the ground masala. Let it marinate for 1 or 2 hours.

Heat a sauce pan; put oil, chopped onion and sauté till they are translucent, then add the marinated chicken and cook on a low flame till done. Reduce the gravy if any.

Chop/shred the cooked chicken (or Beef roast) into small pieces and pass it through a mincer or grind it in small batches on a spice grinding mixer jar to make a course crumb like texture by giving it 2 - 3 short blitz and mixing in between. 


Finely chop ginger, garlic, coriander and green chilies and mince it into a course paste using the mincer or the mixer jar. 

Mix it with the minced meat, add ketchup, some vinegar and salt if required. 

Mix everything and shape into small cylinders. Coat it with whisked egg and bread crumbs/ rava; and deep fry.
