Aloo mutter or potatoes with peas

Aloo mutter

Ingredients :
Oil : 3 tblsp 
Cinnamon : 2 inch piece 
Cloves : 5 - 6
Cardamom : 1 pod
Fennel seeds : 1/2 tsp
Cumin seeds : 1/2 tsp
Onion : 2 (medium)
Garlic : 7 - 8 cloves
Ginger : 1 inch piece 
Tomatoes : 3 (medium)
Coriander powder : 1 tsp
Cumin powder : 1/2 tsp 
Turmeric powder : 1/2 tsp
Pepper powder : 1/2 tsp
Kashmiri chilli powder : 2 tsp
Potatoes : 2 (medium)
Green peas : 1 cup (fresh or frozen)
Water : 1 cup
Milk : 1/2 cup
Kasuri methi : 1/2 tsp
Fresh coriander : handful 
Garam masala : 1/2 tsp (optional)
Salt : to taste 
Sweetener : to taste (optional)

Procedure :

Heat oil in a pan, add cinnamon, cloves, cardamom and fry them until aromatic; then add fennel seeds and cumin seeds. 

Finely chop onions, mince the ginger and garlic and add them into the pan. 

Saute till the onions are light brown in colour. Then add finely chopped tomatoes and cook till they become mushy.

Then add the spice powders- chilli, turmeric, coriander, cumin and pepper and mix everything well. (Then grind half of it to make a paste and return to the pan. If the tomatoes are pulpy you need not grind it.)

Then add water to it and make it like a gravy. To this add the potato cubes and green peas and cook it covered over a low flame. 

Once the potatoes get cooked add milk and bring it to a boil. (If you wish you may add in  some paneer at this point.)

Finally add crushed kasuri methi, chopped coriander, garam masala (optional), salt, and sweetener to taste. 

Serve with roti or naan.
