Tamarind sauce / chutney
Tamarind sauce is a chat accompaniment served with shev puri, pani puri, dahi wada, samosa, kachori, etc.
Ingredients :
Tamarind : 1/2 cup
Jaggery : 2 cups
Garlic : 8 cloves
Ginger : 1 inch
Cumin seeds : 1/2 tsp
Carom seeds (ajwain) : 1/2 tsp
Fennel seeds : 2 tsp
Chili powder: 1 - 2 tsp
Salt : 1/4 tsp
Procedure :
Clean the tamarind by removing the shells and seeds and soak it in water for atleast an hour.
Lightly warm the fennel, cumin and carom seeds just to make it easy to grind.
Powder the spices into a mixer jar.
Then add soaked tamarind, ginger and garlic and make a paste.
Put the ground mixture into a saucepan, add grated jaggery, chili powder and mix it well. Wash the mixer jar with some more water and add it to the sauce. Keep it on a low flame and bring it to a boil. Add more water according to your desired consistency.
Finally add salt and switch off. The sauce will thicken more after cooling. You may strain it through a steel strainer while it is hot.
Serve with chats, samosa, wada pav and snacks of your choice.
