Drambuie cake

Drambuie pound cake

Ingredients:
Butter : 250 gms
Sugar : 1 cup + 4 tblsp (250 gms)
Eggs : 6
All purpose flour (maida) : 2 cups (250 gms)
Baking powder : 1 tblsp 
Orange zest : of 1/2 a navel orange 
Cinnamon powder : 1 tsp (or 2 inch sticks)
Fennel seeds : 2 tsp
Drambuie liqueur / whisky: 2 tblsp 

Procedure:

Lightly roast the cinnamon (if not using powder) and fennel seeds and allow it to cool. Then powder them along with some sugar. Once all the spices are nicely powered add the remaining sugar and powder it as well. 
Put the powdered sugar with softened butter and whisk it until it becomes fluffy.

Then add eggs one at a time and whisk again. 


Sift the flour and baking powder together and fold it into the butter and egg mixture little at a time to make a smooth batter.


Finally add orange zest and drambuie or whisky and mix well. 


Prepare a baking tin by applying oil and dust it with flour or put butter paper. (You may  also add some raisins soaked in Drambuie)


Pour the prepared batter in it and spread it evenly. Preheat the oven and bake it between 150⁰ - 180⁰ for about 1 hour and 15 minutes or until you see it loosen the sides.
