Stuffed bitter gourd

Ingredients :
Bitter gourd : 2
Oli : 2 tblsp
Onion : 1
Garlic : 3 cloves
Tomato : 1
Potato : 1 small
Prawns : 8
Racheado masala : 1 tblsp
Salt : 3 tsp

Procedure:

Peel the gourds, make a lengthwise slit and deseed them; apply 2 tsp salt (salt will neutralise the bitterness) and keep aside at least for half an hour.


Sauté garlic and onion till translucent then add finely chopped potato and tomato and keep covered, sprinkle some water in between if it gets too dry.


Then add chopped prawns and salt to taste; and let them cook on a low flame. 


Finally add racheado masala and mix well. The stuffing is ready.


Mean while boil the gourds (optional) in some water for 5 minutes doing this helps them to cook well; or just wash them well.


Stuff the prepared filling into the gourds, secure them using a thread and fry them in some oil keeping them covered with a lid.
