Bitter gourd rava fry
Ingredients:
Bitter gourd : 2
Salt : 1 tsp
Rava : for dredging
Oil : as required for frying
Rava fry masala : 2 tsp Or
Chili powder : 1 tsp
Turmeric powder : 1/2 tsp
Besan (chickpea) powder : 3 tblsp (optional)
Procedure :
Scrape off the bumps from the gourds, cut them lengthwise and horizontally making four or six pieces depending on their length. Give each piece 3 to 4 slit so they look like fingers. Apply salt and place them under some weight for 45 minutes to 1 hour. Extra salt is put to neutralise the bitterness of the gourds.
After brining them for half an hour to one hour, throw away the liquid and apply the masala or just add chili powder, turmeric powder and some tamarind pulp. (You could also add some besan powder in the marinade.) Then dredge them in rava on each side.
Put them on a frying pan with some oil and keep covered and fry till they are soft from inside. Prick a knife and check if they are done.
