Bitter gourd rava fry 

Ingredients:
Bitter gourd : 2
Salt : 1 tsp
Rava : for dredging 
Oil : as required for frying 


Procedure :

Scrape off the bumps from the gourds, cut them lengthwise and horizontally making four or six pieces depending on their length. Give each piece 3 to 4 slit so they look like fingers. Salt them and place them under some weight for 45 minutes to 1 hour. Extra salt is put to neutralise the bitterness of the gourds. 

Rinse the pieces with some water and apply the masala or just add chili powder, turmeric powder and some tamarind pulp. Then dredge them in rava on each side.

Put them on a frying pan with some oil and keep covered and fry till they are soft from inside. Prick a knife and check if they are done.
