Besan thalipeet or veg omelette
Besan thalipeeth is a good alternative for omelette when you are looking for some protein in veg food.
Ingredients :
Besan (chick pea flour) : 1/4 cup
Chopped green coriander : 2 - 3 tblsp
Green chili : 1
Garlic (Indian) : 2 cloves
Ginger (chopped) : 1 tsp (optional)
Turmeric powder : pinch
Pepper powder : 1/4 tsp
Cumin: 1/4 tsp (optional)
Carom seeds : pinch (optional)
Mint leaves : 5 - 6 leaves (optional)
Salt : to taste
Milk / yoghurt : 1/4 cup
Water : to adjust the consistency
Oil : 3 tblsp
Onion : 1 medium
Tomato : 1/2 (medium )
Serving : This quantity makes 2 medium size thalipeet enough for one person.
Procedure :
Wash and chop the coriander, add chopped green chili, ginger, garlic, turmeric powder, pepper powder, salt and milk / yoghurt and whisk everything well. You can add some soya sauce as well for the umami flavour. (Adding milk/ yoghurt makes the thalipeet soft. Here I have not used the optional ingredients to get close to the omelette flavour)
Sauté chopped onion until translucent then add chopped tomato and sauté until they are soft. This step is optional, you can put them raw as well.
Add the sautéed onion, tomato to the besan mixture and mix well. Add water if required to attain a omelette consistency.
Heat a pan, grease it with oil and pour half the batter and spread it around to make a thin thalipeet/ omelette.
Once it is cooked on one side, flip it over and cook the other side.
