Aloo Katli
Aloo Katli goes well as a side dish along with rice. You can make this recipe using potato, sweet potato, yam, baby potatoes, lady fingers, boiled chickpeas, or sautéed mushrooms.
Ingredients :
Potatoes : 2 medium size
Oil : 2 tblsp
Turmeric powder : 1/4 tsp
Chili powder : 1/4 tsp
Pepper powder : 1/4 tsp
Cumin powder : 1/4 tsp
Amchur (dry mango) powder : 1/2 tsp
Carom seeds : a pinch
Garam masala : 1/4 tsp (optional)
Salt : 1/2 tsp
Coriander leaves : hand ful
Procedure :
1. Wash the potatoes/ sweet potatoes, remove any dirty or dry skin or peel it, then cut them into slices
2. For baby potatoes, wash them and pressure cook them until 2 whistles, then peel them.
3. For yam, peel it (without prior washing) with the help of a peeler or knife, then cut it into slices about 2 - 3 mm thick. And then wash it in water without putting your hands into it, or else it will start itching. (You can rub some tamarind or kokum rind on your hands if your hands are too sensitive to such vegetables that causes itching). Then boil it with salt and tamarind water for 10 minutes.
Mix all the dry spices and salt in a plate. For lady fingers, garam masala also tastes good.
Fry the cut potatoes/ sweet potatoes or yam or baby potatoes till golden brown.
After the potatoes/ sweet potatoes are cooked; and yam and baby potatoes get a golden colour, sprinkle the spice mixture over them and mix well.
When the spices are evenly coated, sprinkle chopped coriander and mix it well.
