Sheer kurma or seviyan kheer

Sheer kurma is a desert specially made on the occasion of Eid. It is made of vermicelli cooked in milk with lot of dry fruits and nuts of your choice. 

Vermicelli (fine) : 100 gms
Ghee : 2 tblsp 
Water : 1 cup
Milk : 1.5 ltr
Sugar : 3/4 cup
Poppy seeds : 1 tblsp 
Cardamoms : 6
Cloves : 10
Nutmeg : 1/8 piece 
Cashew nuts : 1/4 cup
Melon seeds : 2 tblsp 
Raisins : 2 tblsp
Saffron  : a pinch 
Rose water : 1 tblsp 

Procedure :

Lightly warm up the cardamom and cloves and put aside. Then put in the poppy seeds and dry roast them for a minute until it releases it's aroma. 

Put a tablespoon of ghee into the pot and fry the chopped nuts, melon seeds and raisins. Fry the raisins only until it gets a few white blisters on their skin, don't let them swell up or else they will taste bland. The transfer them into a bowl. 

Put another tablespoon of ghee into the pot and fry the vermicelli until it gets a golden colour. 

Then add 1 cup boiling water to the vermicelli and let them soak the water. 

Boil milk in another pot. 

Meanwhile, powder the roasted spices along with 1/2 cup sugar and make a fine powder. 

Put the powdered spices and sugar into the cooked vermicelli and mix it well. You could also add in the fried dry fruits and nuts now or in the end. 

Mix it well, until you don't see any sugar lumps.

Then pour in the boiled milk and let it come to a boil. You should have a homogeneous consistency. Finally add in some saffron strands and rose water for flavour.
