Sweet corn kheer or payasam

Sweet corn kheer 

Ingredients :
Sweet corn : 2 cups
Milk : 500 ml or 3 cups 
Sugar : 1/2 cup
Ghee : 1 tblsp 
Cashew nuts : 2 tblsp 
Raisins : 2 tblsp 
Salt : to taste 
Cardamom powder : 1/4 tsp 
Nutmeg : 1/4 tsp

Procedure :

Grind the corn using around 1 cup milk to a fine paste 

Strain the paste through a strainer and extract it's juice, add half a cup of water to the fibre and extract the juice once again. (You could use the paste directly without straining if you wish. Straining gives it a smooth texture and avoids the fibre from getting into the mouth)

Heat ghee in a pot, add the nuts and raisins and roast for a while. (You may add other nuts and seeds as well)

Then add the extracted corn juice and keep stirring till it boils and thickens up.


Then add sugar and the remaining milk and bring it to a boil. Simmer for 5 minutes then  switch off. Finally add cardamom powder and freshly grated nutmeg.
