Bottle gourd godshe or kheer


Bottle gourd godshe is similar to a payasam. You could also make the same using ash gourd and cucumber too.

Ingredients:
Bottle gourd : 1 small (2 cups)
Sago granules : 3/4 cup or rice flour : 1/2 cup
Coconut : 3 cups
Water : 4 - 5 cups
Jaggery : 1 cup (adjust to taste)
Milk (dairy) : 1 cup
Salt : to taste
Cardamom powder : 1 tsp

Procedure:

Wash and soak the sago granules in water for atleast an hour. 

Peel, deseed and finely chop the gourd. (If the seeds are tender you could use them to make some vegetable). 


Grind the coconut and extract the milk (use water as required to grind the coconut.) Keep the first extract separately. Then add more water and extract the second extract then repeat the process to take the third extract. Keep each extract separately. 


Put the gourd in a heavy bottom pot, add the third extract of coconut milk and cook it till they become soft.

After the gourd is cooked, add the soaked sago and let it cook. (If you are using rice flour mix it with some of the second extract of coconut milk, make a smooth paste, then pour it into the cooked gourd and let it cook over a low flame). Keep stirring, as it may thicken up and stick to the bottom. 


Add the entire second extract of coconut milk when it begins to thickens up. 

Then add grated jaggery and boil once again.

After it boils, add milk (dairy) and the first extract of coconut milk.

Bring this to a boil, add salt and some cardamom/ nutmeg powder for flavouring.
