Orange upside down cake or bolo de laranja
Upside down orange cake also known as bolo de laranja in Portuguese
Ingredients:
Butter : 250 gms
Sugar : 1 cup + 3 tblsp (250 gms)
Eggs : 6
All purpose flour (maida) : 2 cups (250 gms)
Baking powder : 1 tblsp
Navel orange : 3
Water : 1/2 cup
Procedure:
Wash the oranges well and slice two oranges into circles or semi circles or sectors. Remove the seeds and add 2 tblsp sugar, juice of an orange, and half a cup water. Then cover and cook it on a low flame for abour 20 minutes until the rind becomes soft. Allow it to cool down.
Powder the sugar and whisk it along with softened butter until it becomes fluffy; then add eggs one at a time and whisk again.
Sift the flour and baking powder using a sieve and fold it into the butter and egg mixture little at a time to make a smooth batter.
Finally add zest of one orange and mix well.
Prepare a baking tin by applying butter and sprinkle it with some sugar. Then arrange the cooked orange pieces at the bottom and the wall of the pan. Reserve the remaining juice syrup for later use.
Pour the prepared batter in it and spread it evenly. Preheat the oven and bake it between 150⁰ - 180⁰ for about 1 hour and 15 minutes or until you see it loosen the sides.
After baking, keep the cake tin over a gas stove for 2 - 3 minutes so that the sugar gets caramelized and it gets a golden colour. Then turn the cake upside down in a plate, then pierce it with a toothpick at several places and pour the juice syrup over it and allow it to get soaked. Or layer cut the cake into equal halves so that you can spread the juice syrup in between.
