Yam or Suran rava fry

Yam or suran rava fry goes well along with vegetarian meals, it can be even served as a starter. You can also fry other vegetables like potatoes, sweet potatoes, brinjal, bread fruit, ridge gourd and cauliflower. But these are simple and easy to prepare. Whereas with yam and cocoyam you need to deal with it's itchiness.

Ingredients :
Yam : 1/2 kg
Tamarind : 1 marble size ball 
Salt : 1/2 tsp
Water : 1/2 cup
Carom seeds/ ajwain : 1/4 tsp
Turmeric : 1 /2 tsp
Chili powder : 1/2 tsp
Pepper powder : 1/2 tsp
Rava / semolina : as required 
Oil : as required 

Procedure : 

Peel the yam (without prior washing) with the help of a peeler or knife, then cut it into slices about 2 - 3 mm thick. (You can rub some tamarind or kokum rind on your hands if your hands are too sensitive to such vegetables that causes itching). 


Then wash it in water without putting your hands into it, or else it will start itching. Then drain the water out by covering it with a lid.


Soak tamarind in water and add it to the washed slices of yam along with some salt. Put them in a pot and let it cook in half a cup water over a low flame for 8 - 10 minutes or until the yam is cooked. (You could also add 7 - 8 kokum rinds instead of tamarind while cooking.) If there is too much water, cook it on high flame for a while but don't allow it to dry out completely. 

Allow the yam to cool down and check for salt if required. Then add the spices - chili powder, turmeric powder and pepper powder. Gently rub or massage the carom seeds on the palm and then add them to the yam and mix everything well. Or you can use the rava fry masala

Dredge each slice of yam with rava on both sides. 

Then fry it in oil over a griddle on each side.
