Jhunka batata pav
Jhunka batata pav is my creation to replicate the vada pav with no deep frying involved.
Ingredients :
Jhunka :
Besan : 1/2 cup
Water : 1 cups
Turmeric : 1/4 tsp
Pepper powder : 1/4 tsp
Salt : 1/2 tsp
Oil : 2 tblsp
Onion : 1 medium
Indian garlic : 6 cloves
Ginger : 1/2 inch
Coriander : handful
Other ingredients :
Potato (boiled) : 1 big
Onion (chopped) : 1 big
Tamarind chutney : as required
Mint chutney : as required
Nylon sev : as required
Pav : 8 - 10
Procedure :
Prepare the jhunka : take besan in a bowl, add little water at a time and whisk it to make a smooth batter. Put turmeric and mix it well.
Heat oil in a saucepan, add onions and sauté them until they become light brown. Then add chopped ginger, garlic, coriander stems and green chili and sauté for a few seconds.
Switch the flame to low and add the besan batter to it. Stir continuously and keep scrapping it from the bottom so that it doesn't stick. Continue cooking until you get a scrambled egg consistency. Finally add chopped coriander and mix.
Cut the pav into two halves, put chutnies of your choice, and sprinkle some chopped onions.
Then take the jhunka and potato mixture and place it over one half (or shape the jhunka mixture into a tikki /patty) and put some fine sev. Then cover it with the other half of the bread and serve
