Potato wada and Wada pav

Potato wada

Ingredients:
Stuffing:
Potatoes : 4 medium
Oil : 2 - 3 tblsp
Mustard : 1 tsp
Cumin : 1/2 tsp
Carom seeds (ajwain) : 1/4 tsp
Curry leaves : 2 sprigs
Mung dal : 2 tblsp
Onion : 1 medium
Ginger : 1 & 1/2 inch piece
Garlic : 4 cloves
Green chilies : 1 - 2
Fresh coriander : handful
Chili flakes : 1 tsp
Salt : to taste
Batter:
Besan (chickpea flour) : 1 cup
Semolina : 1 tblsp
Carom seeds (ajwain) : 1/4 tsp
Turmeric : 1/4 tsp
Soda Bicarbonate : 1/8 tsp
Salt : 1/2 tsp
Lemon juice : 1/2 tsp
Water : around 1/2 cup
Oil : for deep frying

Procedure: 

Heat oil in a pan, add mustard, cumin, ajwain and curry leaves. Then add the dal and fry till aromatic. Add chopped onion and lightly sweat them; then add turmeric powder and salt and mix well.

Boil, peel, mash the potatoes and add into the sautéed mixture along with some chili flakes, chopped or crushed ginger, garlic; chopped green chilies and fresh coriander. Mix everything well, take a lemon size portion and shape them round or into discoid.

Take a bowl, put in the besan, semolina, ajwain, turmeric, soda bicarbonate, salt and mix well. Add lime juice and water little at a time and make a thick batter.


Deep the shaped stuffing into the batter and deep fry on medium heat.

Serve with ketchup or chutney; or assemble them into Wada pav with butter, green chutney, ketchup/ tamarind sauce, sliced onion, tomato and cucumber.
