Carrot caramel pudding
Ingredients:
Milk : 1/2 ltr
Eggs : 4
Sugar : 7 tblsp + 2 tblsp for caramel
Custard : 1 tblsp (optional)
Grated carrot : 1/2 cup
Procedure:
Mix custard in 3 - 4 tblsp of cold milk and keep aside.
Boil the remaining milk and cook it further for 5 minutes on a low flame (keep stirring), then add the custard mixture and stir for a few more minutes. When the milk has thickened add sugar and switch off the flame. Reserve 3 tblsp sugar to cook the carrot.
Take the grated carrot, add 3 tblsp sugar and cook it for 5 minutes; and allow it to cool down.
After cooling, add 1 egg and grind it to a smooth paste. Then add the remaining 3 eggs and blend them.
Slowly pour this carrot and eggs mixture into the hot boiled milk and stir continuously so that it doesn't form any lumps.
Wash a pan and add 2 tblsp of sugar to the wet pan and caramelize it till dark brown.
Pour the pudding mixture into the prepared tin and steam for 45 minutes or until it's done. To check if it is done insert a knife into it and see if it comes out clean.
