Pos or kharvas with eggs- colostrum pudding

Pos is normally made of Colostrum, in this recipe I have simulated it by using eggs and fermenting the milk with yogurt culture to achieve the tart flavour.

Ingredients :
Milk : 1/2 ltr
Coconut : 1/2 cup
Eggs : 4
Cumin : 1 tsp
Turmeric: 1/4 tsp
Jaggery : 1 cup + 1 tblsp 
Yogurt : 1 - 2 tblsp
Water : 1/3 cup
Turmeric leaves : 1 or 2

Procedure:

Boil the milk and allow it to cool for 10 minutes, keep some milk aside for grinding coconut. Add turmeric powder and jaggery to the remaining milk and dissolve it completely. 

Grind the coconut and cumin using the milk and extract the juice. Extract the juice another time by adding water. Then mix the juice into the boiled milk.


Blend the yogurt culture and the eggs using a mixer jar, eggs should be at room temperature.


Add the egg mixture to the milk and mix well, let it ferment for 2 - 3 hours at room temperature.


Prepare a steamer, put a turmeric leaf over the prepared mixture for fragrance and steam it on a medium flame for half an hour to 45 minutes. Prik a knife to see if it comes out clean to check if it's done. Make sure there's enough water into the steamer.

Allow it to cool down before serving or refrigerate if you wish.
