Orange caramel pudding
Ingredients:
Milk : 1/2 ltr
Eggs : 4
Sugar : 6 tblsp + 2 tblsp for caramel
Custard : 1 tblsp (optional)
Dark rum : 1 - 2 tblsp
Orange zest : of 1/2 an orange
Orange juice : of 1/2 an orange
Procedure:
Mix custard in 3 - 4 tblsp of cold milk and keep aside.
Boil the remaining milk and cook it further for 5 minutes on a low flame (keep stirring), then add the custard mixture and stir for a few more minutes. When the milk has thickened evenly add sugar and switch off the flame. Reserve 2 tblsp sugar to powder the orange zest.
Take the reserved 2 tblsp sugar and the orange zest and powder it in a mixer jar.
Whisk the eggs and slowly pour it into the hot boiled milk, stirring continuously so that it doesn't form any lumps. also add the powdered orange zest and rum.
Wash a pan and add 3 tblsp of sugar to the wet pan and caramelize it just until golden brown.
Then add the orange juice
And reduce it back to the caramel consistency and spread it all over the pan.
Pour the pudding mixture into the prepared tin and steam for 45 minutes or until it's done. To check if it is done insert a knife into it and see if it comes out clean.
