Chicken cafreal with gravy
Ingredients:
Chicken: 1 kg
Onion : 6
Coriander : 1 bunch
Vinegar : 2 tblsp
Oil : 1/4 cup
White rum : 2 tblsp
Salt : to taste
Sweetener : to taste
Green chilies : 3 - 4 (less spicy)
Fresh coriander : 1 cup
Garlic : 6 cloves
Ginger : 1 inch
Cloves : 3
Cinnamon : 1 inch
Cumin seeds : 1 tsp
Pepper corns : 3
Turmeric : 1/4 tsp
Vinegar : 3 tblsp
Procedure:
Clean the chicken, cut into pieces, apply salt and keep aside. Grind all the masala ingredients into a fine paste and marinate the chicken overnight or at least for an hour.
Chop the onions and sauté it in some oil, reserve 2 - 3 tblsp of it and grind the remaining along with chopped coriander (1 bunch).
Grill the marinated chicken and transfer it into another bowl.
Put the reserved sautéed onions in the pan, add ground onion and coriander paste and sauté it in some oil until the paste starts to release oil.
Then add the grilled chicken, white rum, vinegar (adjust the vinegar), sweetener and salt to taste. Add water according to desired consistency.
Serve with bread, roti or naan.
