Cafreal or green masala
Cafreal masala is also called green masala, it is used in various recipes like chicken cafreal, beef gravy, fish rava fry, chicken/ beef fillet rava fry and also veggies like potatoes and cauliflower. Usually carom seeds or tarragon leaves are not used in the recipe; but I like to play with the flavours and it tastes amazing.
Ingredients:
Green chilies : 20 (less spicy)
Coriander : 2 bunches
Garlic : 3 bulbs
Ginger : 3 inch pieces
Cloves : 1 tsp
Cinnamon : 7 - 8 inch pieces
Cumin : 1 tbsp.
Pepper : 1 tsp
Turmeric : 1 tsp
Carom seeds (ajwain) : 1 tsp or
Tarragon leaves : 10 - 12 sprigs (if available)
Vinegar : as required
Oil : 1/4 cup
Small batch:
Green chilies : 4 (less spicy)
Fresh coriander : 1 cup
Garlic : 6 cloves
Ginger : 1 inch
Cloves : 3
Cinnamon : 1 inch
Cumin seeds : 1 tsp
Pepper corns : 3
Turmeric : 1/4 tsp
Carom seeds (ajwain) : 1/4 tsp or
Tarragon leaves : 2 - 3 sprigs (if available)
Vinegar : 3 tblsp
Procedure:
Grind all the spices into a fine paste along with chopped chilies and some vinegar. Do not add any water.
Then add chopped coriander, tarragon leaves and grind it further into a fine paste.
Finally add turmeric powder and some oil and store in sterilized jars.
