Chicken cafreal dry
Chicken cafreal is a green masala based chicken, usually carom seeds or tarragon leaves are not used in the recipe but it gives a great flavour.
Ingredients:
Chicken : 1 kg
White rum : 2 - 3 tbsp.
Potato : 1
Capsicum : 1
Onion: 2
Oil : 4 tblsp
Green chilies : 4 (less spicy)
Fresh coriander : 1 cup
Garlic : 6 cloves
Ginger : 1 inch
Cloves : 3
Cinnamon : 1 inch
Cumin seeds : 1 tsp
Pepper corns : 3
Turmeric : 1/2 tsp
Carom seeds (ajwain) : 1/4 tsp or
Tarragon leaves : 2 - 3 sprigs (if available)
Vinegar : as required
Procedure:
Cut chicken into pieces and apply salt. Grind the masala ingredients to a fine paste and marinate the chicken in that along with 1 tblsp oil, some white rum (optional) and keep refrigerated over night or at least 2- 3 hours before cooking.
Then grill the chicken pieces on a pan, once they are done pour the remaining marinade and coat the chicken pieces in that and cook for a while.
Mix the grilled capsicum, potato wedges and sautéed onions.
