Pork roast or asaad
Asaad is made of different meat like pork, beef and chicken.
Ingredients :
Pork : 1 kg
Onion : 1
Oil : 2 tblsp
Tamarind : 1 lemon size balls
Vinegar : 1 ladle full
Salt : to taste
Masala:
Turmeric powder : 1/2 tsp
Pepper : 1/2 tsp
Cinnamon : 4 inch pieces
Cloves : 8
Cumin : 1 tsp
Garlic : 5 - 6 cloves
Ginger : 1 inch piece
Spicy dry red chilies : 4 - 5
Procedure:
Crush the dry masala ingredients on a grinding stone or mortar and make a course powder. Crush the ginger and garlic; deseed and split the red chilies.
Soak the tamarind in water and extract the pulp.
Clean the meat, cut into big pieces and marinate with salt, turmeric powder, vinegar, tamarind pulp and the ground spices. Let it marinate for 1 or 2 hours.
Heat a sauce pan; put oil, add chopped onion and sauté.
