Fish or prawns mole (pickle)

Mole is a preparation wherein the fish is preserved by frying crisp and cooked in Racheado masala.

Ingredients : 
Kingfish fillets : 9 - 10
Garlic : 5 - 6 cloves
Oil : for frying
Racheado masala : as required

Procedure :

Marinate the fish with turmeric, vinegar and a bit extra salt then you would normally put; and put them on an oiled pan.

Fry them on a low flame until the fish becomes very hard, doing this will help preserve it for a longer time. (You may leave it soft if you want to finish it within one or two days). Then add some chopped garlic and sauté for a while.

Finally add racheado masala and coat all the fish pieces in the masala. Add some vinegar if it looks too dry. (No water at all)
