Bombay duck (dry fish) mole or pickle

Mole is a seafood pickle cooked in racheado masala. Made of fish such as kingfish, prawns and dry fish like bombay ducks.

Ingredients:
Dry bombay ducks : 8 (big)
Onions : 4 (medium)
Oil : around 1/2 cups
Sugar : 3 - 4 tsp
Salt : to taste
Kashmiri chilies : 12 (big ones)
Cloves : 6
Cinnamon : 4 inch piece
Pepper : 6
Cumin seeds : 1 tsp
Ginger : 1 inch piece
Garlic : 15 cloves (small variety)
Turmeric : 1/2 tsp
Vinegar : around 3/4 cup

Procedure :

Clean the dry fish by discarding the head, tail and fins.  Clean their bellies and peel off the stomach lining if possible. Then cut them into small pieces and fry them in some oil.

Transfer them into a plate, then fry sliced onions.

Grind the masala ingredients to a fine paste using vinegar (no water at all) and cook it along with the onions and mix well. Then add the fried pieces of dry fish, sugar and salt.

Mix everything together and cook it on a low flame for a while until everything is well combined.
