Red masala
Red masala is mostly used for meat preparation. It is used in recipes like Goan sausage meat, vindaloo preparation, sorpotel, beef steak and dry fish para etc.
Ingredients :
Kashmiri chilies : 15 (big ones)
Cloves : 8
Cinnamon : 6 inch piece
Pepper : 8
Cumin seeds : 1 & 1/2 tsp
Ginger : 2 inch piece
Garlic : 20 cloves (small variety)
Turmeric : 1 tsp
Vinegar : around 1 cup
Or make a small batch :
Kashmiri chilies : 6
Cloves : 4
Cinnamon : 2 inch piece
Cumin seeds : 1/2 tsp
Pepper : 4
Ginger : 1/2 inch piece
Garlic : 10 cloves
Turmeric : 1/4 tsp
Vinegar : around 1/4 cup
Procedure:
Put all the ingredients in a spice grinder and roughly powder them.
Add vinegar little at a time and make a fine paste.
