Goan Chili chicken
The Goan style chili chicken doesn't involve deep frying unlike the Chinese version. This is also a dry recipe spiced up with green chilies. You could spike the heat or reduce it according to your preference.
Ingredients:
Chicken : 1 & 1/2 kg
Vinegar : 2 tblsp
Soya sauce : 1 tblsp (optional)
Salt : to taste
Ginger- garlic paste : 1 tblsp
Ketchup : 2 tblsp
Onions : 5 medium
Green chilies : 4 - 5
Garlic (Indian) : 15 cloves
Garam masala : 1 tblsp
Fresh coriander : handful
Procedure:
Clean the chicken, add salt, vinegar, soy sauce, ketchup and ginger-garlic paste, mix it well and let it rest for an hour. (If you don't have ginger-garlic paste just grate in 10 cloves of garlic and a inch piece of ginger)
Slice the onions and saute them In oil in a sauce pan, then add chopped garlic and slit green chilies mix them and saute for a few seconds. Then transfer them into a bowl.
In the same sauce pan add the marinated chicken and cook it on high flame to seer the sides, then cover it with a lid and cook on low flame until it releases it's water and then thickens up again.
After the water has reduced add in the sautéed onions, chopped coriander and garam masala and let it cook until all the flavours are well combined.
Check for salt or any other seasoning. Serve with rice or bread or chapati.
