Jhunka

Jhunka is a preparation made of besan which reassembles the scrambled egg.

Ingredients : 
Besan : 1 cup
Water : 2 cups
Turmeric : 1/4 tsp
Pepper powder : 1/4 tsp
Salt: 1/2 tsp
Onion : 1 big
Indian garlic : 6 cloves 
Ginger : 1/2 inch
Coriander : handful

Procedure  : 

Take besan in a bowl, add little water at a time and whisk it to make a smooth batter. Put turmeric and mix it well. 

Heat oil in a saucepan, add onions and sauté them until they become light brown. Then add chopped ginger, garlic, coriander stems and green chili and sauté for a few seconds. 


Switch the flame to low, add the besan batter to it and stir continuously.

Keep scrapping it from the bottom of the pan so that it doesn't stick. 

Continue cooking until you get a scrambled egg consistency. 

When all the water has dried out add chopped coriander and salt and mix it well.

Serve with chapati, bread or as a side dish with rice.
