Sooriche polle or Toddy pancakes
Sooriche polle are made of rice and coconut toddy
Ingredients:
Matta / par boiled (ukdo) rice : 2 cups
Cooked rice : 1 cup
Grated coconut : 1 cup
Toddy : 1 cup
Jaggery : 2 tblsp
Salt : 1 tsp
Oil : as required
Procedure :
Wash the rice thoroughly and soak it overnight for 7 to 8 hours. Next day drain it and grind it along with cooked rice using the toddy to a make a smooth batter.
Roughly grind grated coconut and jaggery into the batter. (You can add half part water for grinding if you wish or if you have less toddy)
Add salt and water (if required) to make a thin batter. Let it rest for half an hour.
Heat a pan, oil it and pour a laddle full of the batter on the pan. Spread the batter to make a pancake. Or make a bit smaller and thicker ones which will be fluffy like sanna. Cover and let it cook for about a minute.
Flip it over and cook it on the other side for another half a minute or until it's golden brown on both sides.
If you want them more fluffy, soak the rice in the morning, grind them in the evening and let the batter ferment overnight. Next day make the polle same as above.
